I would commit crimes to have your research skills. I know what I'm making after my, um, procedure next week.

Perfect. These little creams will slide right down….

The last time I made these, I added a bit of THC simply because I liked the idea of crème de pot pot de crème.

Wonderful article, again. The history then sent me down the rabbit hole to see if Quai Nesle might be related to Nestlé (not at all) But I ended up the scandalous Tour de Nesle Affair. French history is as deliciously decadent as the cuisine.

Have you read Les Rois Maudits???

Wow, the research is beyond fascinating, and yes, chocolate is life! Now I can add medicinal as I eat it at midnight by the light of the refrigerator 😂

What a great article and recipe Jamie, one of your best yet(of so many).💙

Thank you, Jamie. I read this as I was consuming a chocolate and strawberry smoothie my wife brought out to my woodshop to reward me for building a cabinet for her. I now lay the responsibility for my love of chocolate on my South American and Spanish roots. I'll think of your wonderful history every evening as I have my piece of dark chocolate and glass of red wine.

I must say that my nightly square of dark chocolate with red pepper (chocolate au piment) for « medicinal purposes » is totally justified by your treatise. The scientific name of the tree that produces it says it all: theobroma cacao. My late father, a devout Catholic who subsisted most of his life on both liquid and solid chocolate; would have been shocked to hear that chocolate was at one time considered sinful.

What I love is that when there were people who claimed chocolate was sinful so many people fought back!!

Great post! I inherited a “Chocolate Set” as my Mom called it - passed down from my Belgian great grandmother whose parents were born in East Flanders in the mid 19th century. We never knew why it was called this or exactly how it was used, as the pot was unusually tall, with tiny saucerless cups. Now I know thanks to your amazing research, Jamie. Thank you!

I bet that chocolat set is beautiful!!

I have now gotten a copy of the first book of Accursed Kings. Was terribly disappointed to not find the English translation at Shakespeare's. My sister and I had a lovely stay at Hôtel Diderot in September but, alas, my confiture was confiscated at the airport so didn't make it home.🥺
