Jamie this is so timely. I am taking strawberry shortcake next week to a dinner and didn’t quite know how to make whipped cream. I don’t have a fancy Kitchenaid but I do have electric beaters. I will try to find double cream at Whole Foods. This looks delicious! Merci!!!
Yay! I do find that double cream is denser so it travels better and stats thick much longer. Just loosen it a bit with regular liquid whipping cream. And I don’t have a Kitchenaid either…. Just a little hand mixer.
Once again your writing has been educational, informative and entertaining. A beautiful homage to a food that once seemed so simple; seems far more interesting now. The way you include the breakdown on how the name of whipped cream, as we call it at our house, changed over its recipe development, and over the centuries. Alexandre Dumas writing a cook book is not something I expected! I knew he was a prolific writer, but, never knew he wrote about food. He was so famous in his lifetime. I wonder why it took 3 years to posthumously publish. My mind is expanded (thankfully not my waist lol). Cheers!
