My wife loves two desserts best of all. Creme brulee and pavlova. Which is convenient because from a few eggs the yolks go to brulees and the leftover whites become the pav!

I love your technique, Jamie, precisely the way I've always made it. (I've never heard of flour in it before tho. Very interesting. Is there a noticeable difference in texture?)
