I kept imagining the Nonnettes as an early 1960s French girl group as I read this (very) interesting history of pain d'épice. And I absolutely refuse to see them any other way.
Great eye! I made two batches, the first with too little marmalade, the second with a little too much, but you can eyeball it…I liked my second batch because I liked having the marmalade really present but I say it was too much only because it fell out the bottom of a couple of the cooked ones 😂
Can confirm 😆! Just made a batch of 2 3/4" cakes and added about a tsp of marmalade per cake. The muffin tins are a bit gooey on the bottom but it's hard to get my tongue in there to get every last morsel. Can't wait to try. (By the way, I baked as directed but suspected a 10 to 15 min bake time would be insufficient, and was proven correct: more like 20 mins or so.) These smell amazing! Ok, not waiting to glaze. I'm cracking one open. Wow!
Jamie 💫 you make life delicious.
Thank you for sharing ❤️
Thank you, Anders ☺️
I recently tasted nonnettes for the first time—but definitely not the last. I truly appreciate all the history you have provided. Thank you!
Homemade ones are a little different than store bought ones. If you make them I’d love to hear what you think!

Now I’m only going to think of them that way…although they might be dressed in habits.
Jamie, the 1/4 or 1/2 teaspoon of marmalade looks less than what the photos show -- I'm tempted to increase these amounts.
This, like all your recipes, looks delicious and this afternoon's rain will make it a good day to bake.
