Jamie, I can still buy a dozen large eggs from pasture-raised hens for $4.99 in New Hampshire, although some markets charge more. Regular eggs can be gotten for less, including cage-free. Even if they were $6.99/dozen, that's less than $0.60/eggs, which is still a bargain when you consider their versatility and nutritional value.

oh no.....i held out hope in france it would be better than here! making a génoise without separating the eggs to ensure that the yolk is the right weight ends up with a coarse texture unless you jsut add a yolk!
In the last two days we’ve had nine inches of snowfall ❄️ and more coming today! A perfect reason for a hygge day! On the menu is Shepherd’s Pie and now this wonderful chocolate cake - so easy! I love chocolate cake and brownies that are denser and chewy.
All of these sound delicious, Jamie! I might have a hard time choosing one so will probably have to make all three. I’m still cooking with eggs, but being a little more sparing in light of the prices. Even though our local Trader Joe’s still offers them at a far more reasonable price than anyone else, they ration them to a dozen per visit and run out well before noon.
I never for a moment believed DT would make good on his promises to lower food prices and can’t understand why he hoodwinked so many. I guess they just wanted to believe—and many still do. It’s unfathomable—but then so is the appeal of most of the world’s dictators.

do you have a problem with shrinking egg yolks in france the way we do here? wuat used tp be close to 19 grams for yolks is often around 15 grams!
