Apricots and rice pudding. Two things I adore. I’ve had no luck finding fresh apricots this season. Do you think reconstituting good dried apricots in the poaching liquid might work as an alternative?
My husband loves rice pudding. He'll be done with a medical icky thing (he'll get to ring the bell!!!) on Monday, so this will be a fabulous treat to make for him next week to celebrate.
As per usual, I confess.....I jumped down to the recipe, so now I'll reheat my yummy coffee and read your well researched and always interesting history of this dish.
